Vegan Mushroom Soup

4 portions

Ingredients:

·       1 onion

·       1 clove of garlic

·       Olive oil

·       500 g mushrooms

·       1 l vegetable broth

·       Salt and pepper

·       4 tbsp vegan cream + 1 tbsp for garnish

·       Fresh parsley, pea sprouts,….

·       Selfmade croutons

 

Preparation:

·       Finely chop the onion and garlic and cut the mushrooms into 1 cm cubes

·       In a large pot with olive oil, sauté the onion and garlic until they turn translucent

·       Add the mushrooms to the pot and sauté for a few more minutes

·       Pour in the vegetable broth

·       Cover the pot and let the soup simmer for about 10 minutes

·       Add the vegan cream, salt and pepper

·       Purée the soup and season to taste

·       Garnish the soup with fresh herbs, some crispy croutons and a bit of vegan cream
