8 bagels
total time: 3 hours
baking time: 15-20 minutes

Ingredients:

  • 400g flour

  • 1 tbsp honey

  • 10g fresh yeast

  • 9g salt

  • 225ml lukewarm water

  • cooking-water: 2l water, 2tbsp honey, 1 tbsp baking soda, 1 tsp salt

  • Toppings: sesame seeds, poppyseeds

Preparation:

  • Knead all the ingredients into a smooth dough

  • Cover the dough and let it rest for about 2h in a warm place

  • Devide it into 8 pieces and form each of them into balls

  • Cover the balls and let them rest for 5 mins.

  • Create a hole in the middle of the ball using the handle of a cooking spoon and spin it around so that the hole gets bigger

  • let the bagels rest again for ½ h (covered)

  • Bring the water with honey, baking soda and salt to a boil, then reduce the heat to a simmer

  • Put the bagels, one another, for about 60 seconds into the simmering water and flip it after 30 seconds.

  • Let the bagels Gut drain, top them with sesame seeds and poppy seeds and bake them at 200°C (hot air) for 15-20 minutes
