mixed salad with millet patties

Serves: 4
INGREDIENTS:
1 cup millet
2 cups water
salt and pepper
1 small egg
olive oil for frying
curled lettuce
arugula
12 cherry tomatoes
4 radishes
1/2 cucumber
Dressing:2 tbsp balsamic vinegar
1 tsp mustard
1 tsp honey
salt and pepper
1 tbsp olive oil
a splash of water
fresh herbs, chopped (thyme, basil, rosemary, sage)
PREPARATION:
Rinse the millet with hot water and bring it to a boil using 2 cups of water
Reduce the heat and let the millet simmer for 5 minutes
Remove from the heat and let it soak for 30 minutes
Let it cool down completely
Season the millet with salt and pepper and mix in the egg
Form small patties and fry them in a pan with olive oil until the patties are golden on both sides
Wash the salad and veggies and cut into bite- size pieces
Put everything together in a bowl and place the millet patties on top
For the dressing, stir together all the ingredients and pour it over the salad
