mixed salad with millet patties

Serves: 4

INGREDIENTS:

  • 1 cup millet

  • 2 cups water

  • salt and pepper

  • 1 small egg

  • olive oil for frying

  • curled lettuce

  • arugula

  • 12 cherry tomatoes

  • 4 radishes

  • 1/2 cucumber

    Dressing:

  • 2 tbsp balsamic vinegar

  • 1 tsp mustard

  • 1 tsp honey

  • salt and pepper

  • 1 tbsp olive oil

  • a splash of water

  • fresh herbs, chopped (thyme, basil, rosemary, sage)

PREPARATION:

  • Rinse the millet with hot water and bring it to a boil using 2 cups of water

  • Reduce the heat and let the millet simmer for 5 minutes

  • Remove from the heat and let it soak for 30 minutes

  • Let it cool down completely

  • Season the millet with salt and pepper and mix in the egg

  • Form small patties and fry them in a pan with olive oil until the patties are golden on both sides

  • Wash the salad and veggies and cut into bite- size pieces

  • Put everything together in a bowl and place the millet patties on top

  • For the dressing, stir together all the ingredients and pour it over the salad
