Quinoa Zucchini Salad

This colorful quinoa salad doesn’t only excite our eyes, but also our taste buds. It’s really quickly prepared and packed with exciting flavors and wholesome ingredients. The quinoa salad tastes warm as well as cold and it’s also the perfect packed lunch or snack!

INGREDIENTS:

(4 portions)

  • 250g quinoa

  • 1 garlic clove

  • 3 zucchini

  • salt and pepper

  • 4 tbsp olive oil

  • 1 bunch parsley

  • 1 cucumber

  • juice of 1 lemon

  • 50 ml olive oil

  • salt and pepper

Topping: indian cress, starflowers and marigolds

ZUBEREITUNG:

  • Let the quinoa cook in 500ml water for about 25 minutes.

  • Preheat the grill in the oven at the highest heat. (Alternatively you can also put it on the grill, of course!)

  • Finely chop the garlic clove

  • cut the zucchini lengthwise into fine slices and place it on a baking tray with parchment paper.

  • Coat the zucchini with olive oil and season with garlic, salt and pepper.

  • Grill the zucchini until they’re golden.

  • Cut the cucuber into fine slices and chop the parsley roughly.

  • For the dressing, mix olive oil, lemon juice, salt and pepper.

  • Finally, mix everything together in a huge bowl, spread the zucchini slices on top of the salad and top it with indian cress, starflowers and marigolds.
