Autumnal Burger

Portions: 4 Burgers

Ingredients:

Buns:

·       1 big cauliflower

·       2 eggs

·       1-2 tbsp corn starch

·       Salt and pepper

·       sesame seeds to sprinkle

Red Beet Patties:

·       ½ onion

·       200g red beet, cooked

·       100g potatoes

·       1 EL Psyllium husks or grounded flaxseeds

·       1 egg

·       salt and pepper

·       nutmeg

·       oliveoil for frying

Red cabbage:

·       1 red onion

·       1 ½ tbsp red wine vinegar

·       1 tsp honey

·       Salt and pepper

Horse radish cream:

·       250g sour cream

·       some lemon juice

·       Salt and pepper

·       2-3 tbsp freshly grated horse radish

Additional:

·      red cabbage sprouts

 

Preparation:

·       Wash the red cabbage and finely slice it, knead together with the other ingredietns and let it sit for about 30 minutes.

·       Wash the cauliflower, divide it into small pieces and steam it till it’s smooth (this should take about 10- 20 minutes, depending on the size)

·       Chop the cauliflower very finely using a food processor or a fork. As soon as the mixture is crumbly it’s perfect, so don’t create a mousse ;)

·       Put it into a towel and press out as much fluid as possible. The cauliflower needs to be as dry as possible.

·       Put into a bowl and add eggs, salt, pepper and corn starch and mix well to combine.

·       Form 8 patties (flat ciecles) and place them on a baking try lined with parchment paper. Bake the cauliflower buns at 175°C until they’re golden.

·       Let the cauliflower- buns cool down for about 10 minutes before removing them from the parchment paper! Otherwise they might break to bits.

·      Meanwhile we can prepare the red beet patties: Therefore, chop the onions very finely. Peal the red beet as well as the potatoes and grate them roughly. Press out the grated veggies . Mix together with the other ingredients and season.

·       Heat up a bit of olive oil in a pan, form 4 flat patties (they should be a bit smaller than the cauliflower patties). Bake until they’re golden on both sides.

·       Season the sour cream and mix in the horse radish.

·       Put together the Burger like this: cauliflower bun, red beet patty, horse radish cream, red cabbage, cauliflower bun, red cabbage sprouts
