CHIA PARFAIT WITH APRICOTS AND HONEY

2 Portions

INGREDIENTS:

·      2 tbsp Chiaseeds

·       125 ml plantmilk

·      4 apricots

·       2 tbsp almonds

·       (plantbased) yogurt

·       some honey (or maple syrup)

Toppings: hempseeds, pumpkinseeds, blackberries,…

 

PREPARATION:

·       Mix together the chiaseeds and plantmilk and let the mixture sit in the fridge for at least 30 minutes, but better overnight.

·      Cut the apricots into cubes and stew them in a pan with a splash of water until they’re soft.

·      Roughly chop the almonds and toast them in a pan (without any oil)

·      Layer the apricots in a jar, add the chiapudding, yogurt and almonds.

·      Add your preferred toppings to the parfait, such as fresh blackberries, hempseeds and pumpkinseeds.

TIPP: you can also use peaches, applesauce or berries instead of apricots!
