zucchini Chocolate cake

26 cm spring form pan

Ingredients:

-200g dark chocolate

-120g butter

-150g sugar

-4 tbsp cacao powder

-200g zucchini

-handful chopped hazelnuts

-3 eggs

-150g flour

-1,5 tbsp baking powder

-pinch of salt

-vanilla extract

-splash of rum

-1 tsp coconut oil

-150g dark chocolate

 

Preparation:

-      Preheat the oven to 170°C.

-      Chop the dark chocolate. Melt the butter in a pot, remove it from the heat and stir in the chocolate.

-      Pour the melted chocolate in a bowl, stir in the sugar and cacao powder.

-      Grate the zucchini and mix it into the chocolate mixture. Add the eggs, salz, vanilla and rum and mix everything to combine.

-      Quickly mix in the flour, chopped hazelnuts and baking powder.

-      Grease the spring form, fill in the dough and bake the cake for about 15-20 minutes. (Test with a skewer)

-      Let the cake cool down completely before turning it out of the form.

-      For the glaze, chop the dark chocolate and melt 2/3 of the chocolate together with the coconut oil using a waterbath. Remove from the heat and stir in the rest of the chocolate.

Pour it over the cake and decorate with fresh strawberries!
