rice salad
with cauliflower and cherries
When we read that cauliflower was chosen as an IT-vegetable, we can only smile, because cauliflower was never in or out for us, but always part of our diet. But it is all the more gratifying that more and more people are discovering vegetables and their diversity.
In this recipe we complement the cauliflower florets with brown rice, cherries, onions and lots of fresh herbs from the garden or the window sill. A summer must-have of a special kind!
Ingredients:
1 cauliflower
300g brown rice
100g cherries, pitted
2 onions, cut into wedges
2 tablespoons of olive oil
3 tablespoons of balsamic vinegar
1 tsp mustard
1 tsp honey
salt
pepper
herbs (chives, parsley, basil, thyme, sage, oregano, rosemary…)
Preparation:
Divide cauliflower into florets, wash thoroughly and steam gently
Cook brown rice according to the package instructions
steam the cherries gently in their own juice
fry the onion wedges in olive oil
Mix the dressing from olive oil, vinegar, mustard, honey, salt, pepper and herbs
mix rice and cauliflower
Spread dressing over it and garnish with cherries and onions
